The rundown
Shun's Premier chef's knife pairs a VG-MAX steel core, hardened to 60-61 Rockwell, with 34 layers of Damascus cladding on each side and a hand-hammered tsuchime finish that helps food release from the blade. Each 8-inch blade is hand-sharpened in Seki, Japan to a 16° double bevel for clean, precise cuts. The full-tang build and contoured walnut PakkaWood handle balance it at about 7.5 ounces, and it works for left or right hands.
